Vegan Chickpea Lunch Perfection

Delicious, quick and easy one pot dish by @deliciouslyella. This is my go to dish to help my body re-fuel after a high intensity workout. Packed with protein and fibre, it's filling without being heavy. And did I say quick an easy!


Ingredients

1 small Onion finely chopped

1 x clove garlic chopped

Dozen or so sun-dried tomatoes chopped

Dozen or so fresh cherry tomatoes chopped

2 x tins chickpeas

Large handful of fresh spinach

Vegan Coconut Yoghurt to serve


Method

GarlicSauté onion and garlic with salt and olive oil. Add chopped sun dried tomatoes and a bit of their oil. Once its nice and hot, add chopped cherry toms and let the tomatoes cook for a few minutes. Stir in 2 x tins of chickpeas. Finally add fresh spinach and a squeeze of lemon.

Top with vegan coconut yoghurt and voila — lunch is served.
